planning the menu

I am having trouble making the menus for the week because I am not that creative of a cook.  Outside of the basics, I really need some suggestions that are low in fat and good for you.  Plain chicken, veggie, and a potato is getting really old, very old.  Any suggestions out there?  I love chicken, fish, spinach, broccoli, and other veggies.  I just need new recipes that are also not very expensive to make.  I need help!  Thanks!! <3

a new month is about to start

I am looking forward to the start of a new month and new season.  I will go shopping this weekend and I have already started on the list.  I don't have any plans for the Holiday weekend.  I am not going to go any where either but that is okay.  I will probably teach a few lessons, and maybe reschedule a few that can't have their lessons on Monday.

I have a new planner to keep better track of what I eat.  I also am using menus for some of the days.  I don't always stick to it, but I do at least try.  I will be taking my indoor grill to the appliance repair store because I need a metal bar for the element to sit on.  For some reason, it is missing.  I don't think it came with it.  It hasn't been used very much.  We wore the one Mom had out.  I love using it.  I also have a Foreman grill too but I like the indoor one better.  I also have some nice roasts that i will be cooking in the crock pot.  I love the crock pot too.

this week

This week sucks in the eating healthy department.  I don't remember what I ate on Sunday or Monday.  I know I had Chipotle on Tuesday.  I can't remember what I had today except at the movies I had a Cinnamon pretzel with my drink.  It was a great movie!  I love that movie so much.  I can't wait until it comes out on DVD.  I will definitely be getting it to add to my Harry Potter collection.  Donna enjoyed the movie too but she doesn't have all the movies.  She usually borrows movies from someone and then copies them.  Right now I can't be away from my movies as I have been watching them a lot, so she will have to wait for them.

I hope the rest of the week is better for eating healthy.  I am running out of fruit too.  I will have to pick some up tomorrow after the new lesson.

Friday

I have done pretty well with food this week.  I have eaten dinner at home several days.  Today, I had Chipotle for lunch and then I had eggs for dinner.  Tomorrow I will have spaghetti.  I FINALLY have another pasta pot.  I ordered it last week and it came in yesterday.  I have turkey sausage, mushrooms, and Florintine Spaghetti Sauce.  I like the Classico brand.  It is usually pretty yummy.  I plan to make extra so that I can put some in a container and freeze it for another day.  I love spaghetti.  I love pasta but i am careful of how much I eat of it.

I haven't done much with the exercise this week.  I am disappointed in myself for that but I will try again tomorrow.  I can't do very much on the Elliptical machine, but I do my best.  Since I can't stand for a very long time or walk very well, I can only do a few minutes on the machine.  I figure that at least I am doing a bit when I can.  I need to step it up though.  Well, tomorrow is a new day.

It has been a good day for me.  I saw several people that I haven't seen in a very long time.  I hope your day is good too.

A good day

I had a good sandwich for lunch, it had turkey, cheese, tomatoes, lettuce, and mayo.  I was pleased that there was nothing fried!  I also have had 1 banana today.  I can't remember what else I had, but so far it has been very healthy.  I would say today is the healthiest since the first week.  I am trying to eat smaller meals more frequent.  That is hard because of my sleeping patterns and the amount of time I spend in bed.  Anne Marie mentioned (and reminded me!) that only eating 2 meals a day is bad, which is something that I have been doing.  I will be working on incorporating small meals into my day.  I think I can do this.

August Grocery shopping!

I made a list and pretty much stuck to it.  I only bought 2 things off the list, a box of teddy grahams and fruit because I forgot to put both on the list.  I was also very excited because they had fresh corned beef again!!!  I picked up one and will be cooking it tomorrow for tomorrows dinner.  I ran out of fresh fruit yesterday so why that was not on my list, I have no idea but I have grapes, bananas, and blueberries!  I love those 3 fruits best.

I haven't made an actual menu but I did have a mental idea of what I am going to make these next few days.  I picked up some fresh hamburger for a pasta meal and I also have some turkey sausage for spaghetti in addition to the corned beef.  I didn't buy any chicken because I have 2 packages of chicken in the freezer so I don't need any of that right now.  I have fresh milk and for the 2nd time this summer, I managed to finish the 1/2 gallon before it was expired!  That was important because I am trying to drink at least 8 oz of milk a day because of the nutrition in it.  I can't take a multivitamin because of the coumedin medicine for my blood so I have to make sure I have the proper nutrition with food and boy that is a hard one for me.  I only eat about 2 meals a day because I am not that hungry during the day.  I try to eat the bigger meal for brunch so that dinner is a light affair instead of heavy meal as it is sometimes rather late like around 7 or 8 because of lessons.  That is how it will be this evening but I am planning to have a bowl of cereal for dinner because I had a bigger lunch around 2 pm.

I have a new planner for next year.  I think maybe I should get one more for planning meals.  I will see if that will be necessary.  I am not sure right now.  I will decide in the next week or two about that.

Anyways, I am rather pleased that I stuck mostly to my list.  It sure made shopping tons easier.  I also didn't buy precooked meat like the Hormel meals, I bought the regular stuff you need to cook yourself instead of just heating it up.  One, it is much cheaper, and two, it is healthier and you get more servings out of it then the precooked stuff so all in all a good shopping trip!  Now on to a lesson in a short bit!

the beginning of August

I had Chipotle this afternoon.  Tomorrow I will have chicken.  I will pull it out of the freezer shortly before I go to bed and put it in the fridge.  I am going to make my menus tomorrow in the afternoon between lessons.  I have to look at the freezer to see what all i have.  I will do my grocery shopping later this week.  I have to pick up some milk tomorrow though because I am out.  I want to cook the corned beef that is in the freezer this week.  I will pick up some cabbage, I have the potatoes.  I love corned beef.  I bought it in March right around St. Patrick's Day.  It is about the only time of year they have it unlike in Ireland when they can get it all year round.  I wish we could here too.  I also have nice Cornish hens to cook in the crock-pot too.  I love my crock-pot.  I just now need a spaghetti pot.  the pots I have are not big enough to cook spaghetti in, but other pastas are okay.  I also got some nice pasta sauce for this week.

I hope to have a good week's worth of menus by tomorrow evening and plans for the shopping trip.  I hate grocery shopping without a list.  I never come out with just the 1 or 2 items I planned on buying.  I always end up with more stuff.  I am trying to only go and get what is on my list now.  So far, it hasn't been too bad, I have been able to do that a few times last month.  This month my goal is to shop only with lists and stick to it.  I think I can do it.
